Feta or Greek cheese is an ancient type of cheese made from sheep’s milk. The exact way it’s produced and acquired differs among producers, but its most common production process involves curdling goat or cow milk with rennet, draining off the whey into cloth bags that are then hung to dry in a cool place for a few days. Once it has cured, it is feted by salt and/or vinegar. Europe’s sole producer of feta cheese is Greece.
